RECIPE: Layered Salad

If you're looking for a simple-to-prepare yet elegant side dish to tote along to an Easter gathering this weekend, I highly recommend this layered salad. Everyone always "oohs" and "aahs" over it whenever I take it anywhere, and once they dig in, there's usually not much left over. Use the fanciest glass bowl you've got to assemble this, and you'll be assured "showstopper" status :) If you don't have any fresh herbs on hand, they can be omitted, but they definitely add that little something special to this salad.

Ingredients:
1 head leaf lettuce, shredded
1 cup shredded carrots
1 medium red pepper, chopped
2 cups frozen peas
6 green onions, sliced
3/4 cup mayonnaise
3/4 cup sour cream
1 tbsp white wine vinegar
1 tsp salt
1/2 tsp pepper
1/4 cup fresh chopped herbs (parsley, basil, oregano, chives)
6 slices bacon, cooked and crumbled

Instructions:
In a large glass serving bowl, layer the lettuce, carrots, red pepper, peas and green onion (in that order). Combine the mayonnaise, sour cream, white wine vinegar, salt, pepper, and herbs (if using). Spread evenly over top of salad. Cover and chill overnight. Sprinkle with bacon just before serving.

Serves 8.

  1. Do you put the peas in the salad frozen?

  2. Yes, I put them in frozen. Every recipe I've ever seen for this type of layered salad calls for frozen peas. I'm not sure that it would make a whole lot of difference if they were thawed, but it's definitely fine to put them in straight out of the freezer.

  3. Yum! My grandma ALWAYS had a similar version of this out on holidays that I loved as a child. I plan on making it for Easter this year for the first time ever. I hope my family likes it too!

  5. I like the sour cream/mayo mix. I have had layered salad before and it was good, but the dressing was 100% mayo and too heavy. This sounds great, thanks for sharing.

  8. You're welcome, Renee! I seem to do that too - have a dish that I make often for a while and then forget all about for ages. Glad to bring this one back for you :)
