ReplyDeleteI think so many people overlook the benefit of leftovers! We eat them ALL the time for lunch...and it requires little to no extra work!

Ashley, the bean & rice squares are basically like a quiche/frittata with black beans, rice, salsa and cheddar cheese, baked in an 8" square pan. They aren't very photogenic so I haven't posted the recipe here yet :) The peanut & tomato soup is a family favourite, and super easy to make! I really love that flavour combo.
ReplyDeleteAndrea, I know so many people who don't like to eat leftovers and I don't really get it - they are perfect for lunches. Unfortunately with 11 & 13 yr old boys, we don't have too many leftovers anymore; I miss those days where I could always count on having some. Hope you give some of the recipes a whirl - the spinach and chicken pasta is really, really, good - just had it last week and I'm craving it again :)
