Weekly Menu Retrospective #28

Welcome to my weekly roundup of the past week's eats. I prefer to report what we ate in the last week, rather than what we're planning to eat in the coming week. Why? The reason is pretty simple: although I usually have a general idea of what we're going to eat in the next week or so, life often unfolds a little differently than planned, and I adjust my menu plan on a near-daily basis to accommodate leftovers and other not-possible-to-plan-ahead circumstances. I find this is the easiest way to ensure that I minimize our family's food waste. I'm also willing to admit that I'm a rather spontaneous cook, given to preparing foods that strike me as the most appealing thing to eat right here and now!

Breakfasts: peanut butter toast, bagels with cream cheese, homemade granola with yogurt or milk, banana chocolate chip muffins, coconut orange pancakes

Lunches: grilled cheese, pizza, leftovers

Dinners:

Monday: Spicy Peanut & Tomato Soup

Tuesday: Lemony Chicken & Spinach Pasta

Wednesday: Sausage on a bun, Easy Oven Fries, fresh pineapple

Thursday: Cheesy Mac & Beef Skillet

Friday: Bean & Rice Squares

Saturday: Pasta e Fagioli

Sunday: Chicken Pot Pie, mashed potatoes, gravy, green beans, Old-Fashioned Butterscotch Pudding

Snacks & Sides: apples, clementines, bananas, fresh pineapple, carrot and cucumber slices, homemade yogurt, popcorn

  1. I'm intrigued by bean and rice squares; can't wait to see what that entails. Also, peanut and tomato soup looks ridiculously good! I'll be putting up an Asian peanut noodle recipe this week. Thanks for visiting yesterday!

  2. I think so many people overlook the benefit of leftovers! We eat them ALL the time for lunch...and it requires little to no extra work!

    Your dinner ideas look great...I may just have to try a few!

  3. Ashley, the bean & rice squares are basically like a quiche/frittata with black beans, rice, salsa and cheddar cheese, baked in an 8" square pan. They aren't very photogenic so I haven't posted the recipe here yet :) The peanut & tomato soup is a family favourite, and super easy to make! I really love that flavour combo.

    Andrea, I know so many people who don't like to eat leftovers and I don't really get it - they are perfect for lunches. Unfortunately with 11 & 13 yr old boys, we don't have too many leftovers anymore; I miss those days where I could always count on having some. Hope you give some of the recipes a whirl - the spinach and chicken pasta is really, really, good - just had it last week and I'm craving it again :)
